The standard pork chop dish seems to be served with apple sauce. Why not use a nice apricot glaze on top and pair it with some organic steamed broccoli and potato pancakes?

First, peel and slice your potatoes in a jardiniere cut, which are tiny sticks. If you have a mandolin, I would recommend using this to save time, just be careful you don’t lose a finger while using the mandolin!
Place half the potatoes in a heated saute pan (add 1/4 cup of olive oil) and cook until all potatoes mold together (approximately cook each side of potato cake for 15 minutes). Make sure potato holds together before flipping or else you could have a big mess.

Season pork chops with salt and pepper and saute will a couple tablespoons of olive oil. Cook each side of pork chop for 3-4 minutes. You are just searing it at this stage before placing in the oven.
In a small mixing bowl, combine the apricot jelly, cinnamon, honey, mustard and salt and whisk together.
Place the sauce on top of pork chop before going in oven to create a nice glaze.
Steam the broccoli and chopped onions while pork chops are baking and pair next to the potato pancakes. Enjoy!
