Apple Glazed Chicken Stuffed Goat Cheese

Why I love September.. it is the beginning of the harvest and one of my favorite fruits are in season..apples!Click on quick recipe below to enlarge and print.

Begin by peeling and then cutting potatoes in half or in quarters and place in boiling water for 30 minutes. The test to see if they are done, puncture the potato with a fork or spoon, lift out of water and if it slips off the fork or spoon, they are finished cooking. 

To make your glaze, it is really simple. You add 1/2 a cup of apple jelly, 1 tablespoon of honey, 2 tablespoons of of dijon mustard, 1 teaspoon of cinnamon and a pinch of salt. Whisk together then set your glaze aside. 

Next, brown each side of raw chicken breast for 2-4 minutes on each side in saute pan. You can use a couple of tablespoons of olive oil in pan for sauteing.  Then carefully slice chicken in half (by the width).  I also added some chicken rub seasoning to the breasts. 

Then, stuff the chicken with goat cheese. Don’t go crazy here folks with the cheese! It’s used to give flavor and texture to the breast, not for overindulging 😉 

Then, coat each side of breast with breadcrumbs

Place your breasts in the oven and brush glaze over breasts. Cook the chicken for 20-25 minutes. 

Take the cooked potatoes and mash them up. If you don’t have a potato masher… I highly recommend buying one (they are cheap) or you could use a large fork.  

In a saute pan add combine steamed mushrooms  spinach and finely chopped onion and incorporate a couple tablespoons of olive olive

Add potatoes to mixture and place on medium heat for approximately 10 minutes

By then, your chicken is done baking 🙂

So tempting.. I had to sneak a bite before serving! The potato and vegetable mixed side can serve approximately 4 people so I had some leftovers.  I used thinly sliced apples as a garnish. What do you think?

  2. I like anything with fillet chicken breast. Goat cheese is great addition. Will try it out soon!

    I am used to making the apricot glazed chicken with the slivered almonds, but I LOVE this one with the goat cheese inside…can’t wait to try out a soon-to-be new favorite! Em
