A Quick Veggie Fix

What is one to do with too many baby peppers? I had some leftover Gorgonzola cheese and tomato from the salad I made for the lunch the other day, so I decided to make a little snack. Psst- this is also a nice and light hor d’oeuvre to feed your friends if they are over.  I just added a little bit of parsley for some coloring and flavor and voila! It’s the easiest thing too!

Roast the peppers in the oven for 10-15 minutesAdd the cheese shortly after they are out of the oven so it slightly melts into the pepper

Chop up the parsley and sprinkle on top…And you are finished and ready to enjoy your quick veggie fix! This is so easy that I would hardly call this cooking folks!
