Espresso Brownies

I must say, Giada De Laurentiis has the life. She’s gorgeous, talented, has a beautiful family and can eat has much Italian food as she wants and still maintains a teeny tiny waistline.

One great treat Giada created that is utterly incredible is her Espresso Brownies. They are soft, sweet and can totally give you the best excuse to eat chocolate in the morning. With its espresso flavoring… it’s having a piece of heaven with your cup of coffee in the AM. I’ve slightly altered her recipe and added some hazelnuts to the brownies to give it a little something extra.

Once you’ve preheated your oven to 350 degrees and sprayed down your pan with a nonstick spray, pour your water, oil and eggs in a large mixing bowl to blend

P.S- What do you guys think of my first and very own KitchenAid mixer? It was a Christmas present from Santa  🙂

Then add in your espresso powder

And you hazelnuts and chocolate chips. It’s totally expectable to add more or less depending how you feel about nutty brownies

Once all is incorporated, spread mix into baking pan

Bake for 35-40 minutes

Here comes the icing part (try to control yourself from taste testing after this part…. it’s tempting but it’s worth the wait)  As your brownies are baking, grab a medium size bowl and add your remaining espresso powder

Then your vanilla extract

Aaand your powdered sugar… you may use less than the recipe calls for to watch your sugar intake

Add the slightly melted butter

Wisk your icing ingredients all together

Until you get a consistency like such…

Pull your baked brownies out of the oven…

Wait for your brownies to cool and then spread icing over brownies

And then you have a nice plate full of brownies to (of course) enjoy with your friends, family, coworkers…hmmm and you can also feed your neighbors too with this amount

Hang on!!!!Make sure you save yourself one with a nice glass of organic skim milk ( I prefer Stonyfield)

Or like I mentioned above with your cup of coffee in the morning! Rise and Shine!
